Festive Bite-Sized Treats: How to Transform Christmas Leftovers into New Year’s Eve Appetizers
What kinds of bite-sized appetizers can I prepare for New Year’s Eve using my Christmas remaining food that will still seem festive?
Finger food doesn't have to be fancy, so New Year's presents a great chance to clear the decks. The key rule is to stick to items to just one bite—no one wants to manoeuvre a fork. Guests just want a big hug of hearty fare with a luxurious touch.
If you have a bit of cured fish left, place it on mini pancakes and top it with lumpfish caviar. Small patties are also just the ticket: If you have leftover smoked haddock or flaked salmon, fold it through creamy potatoes, blend with dill, citrus, and fried leeks, then roll in panko and fry until golden.
You could also have a ball with Spanish croquettes. Make the bechamel a few days ahead, then use remaining pork, poultry, or foraged fungi for the interior. Whizz old bread into crumbs to cover them, then fry. Savoury pastry mixtures are another perfect use for those crumbs, or use them as a coating for bite-sized chicken. Seasoning-wise, just add a bit of lemon zest and thyme, and they'll taste so much more. As an aside, buttery pastries make superb crumbs, too.
One favourite thing at this time of year is a post-holiday sandwich, and that can continue after Boxing Day. Get some ham and turkey in an airtight container and store in the freezer. While you're at it, reserve some cranberry sauce and sweet glaze in the fridge. When needed, defrost the meat, then pop it in a hot oven with the saved glaze for a short time. Let it cool and slice thinly, then lay on top of some sourdough and assemble mini sandwiches with lots of tangy sauce. Cut into small squares for a winner.
Leftover turkey, meanwhile, could be turned into a zingy salad. There’s always a bit of dark meat left over, and it's ideal for something punchy. Shred the meat, then fry it slowly in a pan, and toss with leftover cranberry sauce loosened with citrus juice, a dash of soy sauce and a little spicy oil. Garnish with fresh herbs and some sliced spring onion, and serve in small lettuce cups.
Revamping Leftover Vegetables
Vegetables, meanwhile, can be scrubbed up and fit for a party with a big batch of fried potato cake. Combine all your leftover veg with fresh herbs, then season and add a binding agent. Cut out portions to about the size of blinis, then store in the freezer. Reheat in a preheated oven for a short time and top with whatever you like—perhaps sliced beef and grated horseradish. A word to the wise, though: set some aside for brunch the next day.
